Ingredients
- 8 bone-in chicken thighs
- 4 spring onions
- 2 scotch bonnet chillies, deseeded for less heat
- 4 garlic cloves
- 3cm ginger
- 2 tablespoons ground allspice
- 1 tablespoon fresh thyme leaves
- 2 tablespoons brown sugar
- 3 tablespoons soy sauce
- 3 tablespoons lime juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon grated nutmeg
- 3 tablespoons oil
Before you cook
- Blend everything except the chicken into a thick, dark marinade.
- Score the chicken thighs a few times through the skin so the marinade reaches the meat.
Steps
- Rub the marinade all over the chicken and into the cuts.
- Marinate in the fridge for at least 4 hours, preferably overnight.
- Heat the oven to 200C.
- Roast the chicken skin side up for 35 minutes on a rack over a tray.
- Turn the heat to 230C for a final 10 minutes to char the edges.
- Check the thickest part reads 75C.
- Rest for 5 minutes before serving.
- Serve with rice and peas and extra lime.
