Ingredients
- 2 cans fava beans (ful), with their liquid
- 3 garlic cloves, crushed to a paste with salt
- Juice of 2 lemons
- 4 tablespoons extra-virgin olive oil
- 1 teaspoon ground cumin
- 2 tomatoes, diced
- 1/2 red onion, finely diced
- Handful parsley, chopped
- Chilli flakes
- Flatbread, to serve
Before you cook
- Crush the garlic with a pinch of salt into a smooth paste, which stops it tasting harsh.
- Dice the tomato and onion small.
Steps
- Warm the beans in their liquid in a saucepan for 5 minutes.
- Mash about half of them against the side of the pan, leaving the rest whole for texture.
- Stir in the garlic paste, cumin and half the lemon juice.
- Loosen with a little hot water if it looks stiff.
- Season with salt and taste, adding more lemon until it tastes bright.
- Spread into a shallow bowl and pour the olive oil generously over the top.
- Scatter over the tomato, red onion, parsley and chilli flakes.
- Serve hot with flatbread for scooping.
