Charred corn rolled in lime mayo, salty cheese and chilli, eaten straight off the cob.

Ingredients
- 4 corn cobs, husks removed
- 4 tablespoons mayonnaise
- 2 tablespoons soured cream
- 80g cotija or feta, finely crumbled
- 1 teaspoon chilli powder
- 1 teaspoon smoked paprika
- 1 lime, cut into wedges
- Coriander, chopped
- Salt
Before you cook
- Mix the mayonnaise and soured cream together.
- Crumble the cheese as finely as you can so it sticks to the corn.
Steps
- Get a griddle pan or barbecue as hot as possible.
- Grill the corn dry, turning every couple of minutes, for about 10 minutes.
- You want blackened patches, not an even colour — the char is the point.
- Brush each hot cob all over with the mayonnaise mixture.
- Roll the cobs in the crumbled cheese on a plate so it sticks all over.
- Dust with chilli powder and smoked paprika.
- Scatter over coriander and squeeze lime generously.
- Serve immediately while still hot.
