A sharp chopped salad with crisp fried flatbread and a sumac and pomegranate dressing.

Ingredients
- 2 pita breads, torn
- 4 tomatoes, cut into chunks
- 1 cucumber, chopped
- 1 romaine heart, sliced
- 4 radishes, sliced
- 4 spring onions, sliced
- Large handful parsley, chopped
- Handful mint, chopped
- 2 tablespoons sumac
- 3 tablespoons olive oil, plus more for frying
- 2 tablespoons lemon juice
- 1 tablespoon pomegranate molasses
- 1 garlic clove, crushed
- Salt
Before you cook
- Tear the pita into rough pieces.
- Chop all the vegetables to roughly the same size so every forkful gets some of each.
Steps
- Fry the pita pieces in olive oil until golden and crisp, then drain and salt them.
- Alternatively bake them at 190C for 8 minutes for a lighter version.
- Whisk the olive oil, lemon juice, pomegranate molasses, garlic, half the sumac and a good pinch of salt.
- Combine all the vegetables and herbs in a large bowl.
- Pour the dressing over and toss well.
- Add the fried bread at the very last moment and toss once more.
- Scatter the remaining sumac over the top.
- Serve immediately, while the bread still has crunch.
