Paula Wolfert called it the finest of the cooked Moroccan salads: aubergine and tomato cooked down with garlic, cumin and paprika until the two collapse into a single smoky, jammy spoonful.

  1. Put the aubergine cubes into a wide pan with 100 ml of water and a pinch of salt.
  2. Cover and steam over medium heat for 12 minutes, until a knife slides through with no resistance.
  3. Drain off any water left in the pan.
  4. Add the olive oil, garlic, grated tomatoes, paprika, cumin, cayenne and salt.
  5. Cook uncovered over medium heat for 20 minutes, stirring every few minutes.
  6. Crush the aubergine against the side of the pan with a wooden spoon as it softens.
  7. Keep cooking until the mixture is thick and no watery liquid pools when you draw the spoon through it.
  8. Stir in the parsley and coriander.
  9. Add the lemon juice and taste for salt.
  10. Spread the zaalouk on a plate, pour over a little more olive oil and serve warm or at room temperature with bread.
