A pre-colonial Filipino sour soup that food historians consider one of the oldest continuous cooking traditions in the Philippines, pork simmered with tamarind, radish, taro and leafy greens.

Ingredients
- 700g pork ribs, cut into pieces
- 6 cups water
- 1 onion, quartered
- 2 tomatoes, quartered
- 3 tablespoons tamarind paste
- 2 tablespoons fish sauce
- 1 small radish, sliced
- 1 small taro root, peeled and cubed
- 1 eggplant, sliced
- 1 cup long green beans, cut into 2-inch pieces
- 6 okra pods
- 2 green finger chilies
- 2 cups water spinach (kangkong)
- Salt, to taste
- Steamed rice, for serving
Before you cook
- Cut the pork ribs into serving pieces.
- Quarter the onion and tomatoes.
- Peel and cube the taro.
- Slice the radish and eggplant.
- Cut the green beans into 2-inch pieces.
Steps
- Bring the pork and water to a boil in a large pot.
- Skim off any foam that rises to the surface.
- Add the onion and tomatoes.
- Reduce the heat and simmer, covered, for 45 minutes until the pork is tender.
- Stir in the tamarind paste and fish sauce.
- Taste and adjust the sourness and saltiness.
- Add the radish and taro.
- Simmer for 8 minutes.
- Add the eggplant, green beans and whole chilies.
- Simmer for 6 minutes.
- Add the okra.
- Simmer for 3 minutes.
- Stir in the water spinach and cook for 1 minute until just wilted.
- Taste and adjust the seasoning one last time.
- Serve hot with steamed rice.
