Zanzibar Pizza

Nothing like an Italian pizza: paper-thin dough is stretched over a griddle at Stone Town's Forodhani night market, loaded with spiced mince, egg and soft cheese, folded into a square parcel and fried in ghee.

Ingredients
- 2 cups (260 g) plain flour
- 3/4 tsp salt
- 2 tbsp vegetable oil
- About 160 ml warm water
- 300 g minced beef
- 1 onion, finely chopped
- 1 green pepper, finely diced
- 3 garlic cloves, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp black pepper
- 1 tsp salt for the filling
- 1 green chilli, finely chopped
- 4 tbsp chopped coriander
- 4 large eggs
- 4 triangles of soft processed cheese, or 100 g grated mozzarella
- 3 tbsp mayonnaise
- 6 tbsp ghee, for cooking
- 1 lime, cut into wedges
Before you cook
- Mix the flour and 3/4 teaspoon of salt in a bowl, add the oil, and rub it through with your fingertips.
- Pour in the warm water gradually and bring the mixture together into a soft, slightly sticky dough.
- Knead the dough for 8 minutes until very smooth and stretchy.
- Divide the dough into four balls, coat each one in oil, and rest them covered for 30 minutes.
- Chop the onion, green pepper, chilli, garlic and coriander.
Steps
- Set a wide frying pan over medium-high heat and brown the mince for 6 minutes, breaking it up as it cooks.
- Add the onion, green pepper and garlic and fry for 5 minutes until softened.
- Stir in the cumin, ground coriander, black pepper, chilli and 1 teaspoon of salt.
- Cook for 3 minutes more, until the pan is dry and the mince smells toasted, then tip the filling into a bowl.
- Stir the chopped coriander through the cooled filling.
- Oil a work surface well and press one dough ball out with your palms into a very thin square, about 25 cm across, until you can almost see through it.
- Spoon a quarter of the mince into the middle of the square in a neat 10 cm patch.
- Crack an egg over the mince and break the yolk with a fork.
- Add a triangle of cheese and a spoonful of mayonnaise on top.
- Fold the four sides of the dough over the filling to make a sealed square parcel.
- Set a flat griddle or heavy frying pan over medium heat and melt a tablespoon of ghee.
- Lay the parcel seam side down in the pan and cook for 4 minutes until the base is crisp and brown.
- Add another half tablespoon of ghee, flip the parcel, and cook the second side for 4 minutes.
- Slide the pizza onto a board and press it gently to check the egg has set inside.
- Shape, fill and fry the remaining three parcels the same way.
- Cut each pizza in half and serve hot with lime wedges.
