Ingredients

Before you cook

Steps

  1. Set a wide frying pan over medium-high heat and brown the mince for 6 minutes, breaking it up as it cooks.
  2. Add the onion, green pepper and garlic and fry for 5 minutes until softened.
  3. Stir in the cumin, ground coriander, black pepper, chilli and 1 teaspoon of salt.
  4. Cook for 3 minutes more, until the pan is dry and the mince smells toasted, then tip the filling into a bowl.
  5. Stir the chopped coriander through the cooled filling.
  6. Oil a work surface well and press one dough ball out with your palms into a very thin square, about 25 cm across, until you can almost see through it.
  7. Spoon a quarter of the mince into the middle of the square in a neat 10 cm patch.
  8. Crack an egg over the mince and break the yolk with a fork.
  9. Add a triangle of cheese and a spoonful of mayonnaise on top.
  10. Fold the four sides of the dough over the filling to make a sealed square parcel.
  11. Set a flat griddle or heavy frying pan over medium heat and melt a tablespoon of ghee.
  12. Lay the parcel seam side down in the pan and cook for 4 minutes until the base is crisp and brown.
  13. Add another half tablespoon of ghee, flip the parcel, and cook the second side for 4 minutes.
  14. Slide the pizza onto a board and press it gently to check the egg has set inside.
  15. Shape, fill and fry the remaining three parcels the same way.
  16. Cut each pizza in half and serve hot with lime wedges.
