Invented around 1900 by Zurich physician Dr. Bircher-Benner for patients at his sanatorium, raw oats soaked overnight in milk and lemon juice, finished with fresh grated apple only at the very last moment.

Steps

  1. The next morning, grate the apples directly into the soaked oat mixture.
  2. Immediately toss the grated apple with the remaining lemon juice to stop it browning.
  3. Stir in the honey.
  4. Fold in the chopped hazelnuts and almonds.
  5. Loosen with a splash more milk if the mixture is too thick.
  6. Spoon into bowls.
  7. Top with a dollop of yogurt and fresh berries before serving.
