  1. Bring the milk, oil and salt to a full rolling boil in a saucepan.
  2. Pour the hot liquid over the tapioca starch in a large bowl.
  3. Mix until a stretchy, slightly lumpy paste forms.
  4. Let the mixture cool for 10 minutes.
  5. Add the eggs one at a time, mixing thoroughly after each addition.
  6. Knead in the grated cheese until the dough is smooth, elastic and sticky.
  7. Let the dough rest for 5 minutes.
  8. Oil your hands and roll the dough into golf ball-sized rounds.
  9. Arrange the rounds on the prepared baking sheet or muffin tin, spaced apart.
  10. Bake for 20 minutes until puffed, golden and cracked on top.
  11. Serve warm.
