  1. Whisk the yeast and one tablespoon of the sugar into the warm milk.
  2. Leave the mixture for ten minutes until it is foaming.
  3. Put the flour, the remaining sugar and the salt into a large bowl.
  4. Beat in the eggs, the vanilla and the yeast milk.
  5. Whisk for two minutes until you have a thick, smooth batter.
  6. Cover the bowl with a cloth and leave it in a warm spot for thirty minutes.
  7. Fold the cinnamon apples gently through the risen batter.
  8. Heat a tablespoon of oil in a wide frying pan over medium heat.
  9. Drop heaped tablespoons of batter into the pan, spacing them well apart.
  10. Fry for three minutes until the undersides are deep golden and the edges look set.
  11. Flip each fritter and fry it for three minutes more.
  12. Lift them onto kitchen paper to drain.
  13. Fry the remaining batter in batches, adding oil as the pan needs it.
  14. Dust the warm fritters heavily with icing sugar and serve.
