Heavy cream supplies both the fat and the liquid here, so there is no butter to cut in and the dough comes together with a fork in under five minutes.

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 1/4 cups cold heavy cream, plus more as needed
- 2 tablespoons melted butter, for brushing
Before you cook
- Heat the oven to 425 degrees Fahrenheit.
- Line a baking sheet with parchment paper.
- Keep the cream in the refrigerator until the moment you use it.
Steps
- Whisk the flour, baking powder, salt and sugar together in a medium bowl.
- Pour in one and a quarter cups of cold cream and stir with a fork.
- Watch for shaggy curds to form and press them together with your hand.
- Add cream one tablespoon at a time only until the last dry crumbs are absorbed.
- Turn the dough onto a lightly floured counter and knead it just five or six times.
- Pat the dough into a square three quarters of an inch thick.
- Cut the square into eight equal rectangles with a sharp knife.
- Set the biscuits on the lined sheet about an inch apart.
- Brush the tops with melted butter.
- Bake for 14 to 16 minutes, until the tops are pale gold and the biscuits feel light.
- Serve them hot with jam or honey.
