The New England style: half flour and half yellow cornmeal, plenty of sugar and butter, baked in a square pan into a soft golden cake you cut into squares.

  1. Whisk the flour, cornmeal, sugar, baking powder and salt together in a large bowl.
  2. Beat the eggs, milk and honey together in a second bowl until smooth.
  3. Whisk the melted butter into the wet ingredients.
  4. Pour the wet mixture into the dry ingredients and fold with a spatula just until combined.
  5. Stop while a few small lumps remain so the crumb stays tender.
  6. Scrape the batter into the buttered pan and smooth the top level.
  7. Bake for 25 to 30 minutes, until the top is golden and a toothpick in the center comes out clean.
  8. Cool the pan on a rack for 10 minutes.
  9. Cut the cornbread into nine squares and serve them warm with butter and more honey.
