
Northern Sweet Cornbread

The New England style: half flour and half yellow cornmeal, plenty of sugar and butter, baked in a square pan into a soft golden cake you cut into squares.

Ingredients
- 1 1/4 cups all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 cup whole milk
- 2 large eggs
- 8 tablespoons unsalted butter, melted
- 2 tablespoons honey
Before you cook
- Heat the oven to 375 degrees Fahrenheit.
- Butter an 8-inch square baking pan.
- Melt the butter and let it cool for a few minutes.
- Bring the eggs and milk to room temperature.
Steps
- Whisk the flour, cornmeal, sugar, baking powder and salt together in a large bowl.
- Beat the eggs, milk and honey together in a second bowl until smooth.
- Whisk the melted butter into the wet ingredients.
- Pour the wet mixture into the dry ingredients and fold with a spatula just until combined.
- Stop while a few small lumps remain so the crumb stays tender.
- Scrape the batter into the buttered pan and smooth the top level.
- Bake for 25 to 30 minutes, until the top is golden and a toothpick in the center comes out clean.
- Cool the pan on a rack for 10 minutes.
- Cut the cornbread into nine squares and serve them warm with butter and more honey.
