Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- Zest of 1 orange
- 3/4 cup fresh orange juice
- 1 large egg
- 6 tablespoons unsalted butter, melted
- 2 cups fresh cranberries, halved
- 3/4 cup chopped walnuts
- 1 tablespoon coarse sugar, for the top
Before you cook
- Heat the oven to 350 degrees Fahrenheit.
- Grease a 9 by 5 inch loaf pan and line the bottom with parchment.
- Zest and juice the orange.
- Halve the cranberries with a knife.
- Chop the walnuts and melt the butter.
Steps
- Whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl.
- Rub the orange zest into the dry ingredients with your fingertips.
- Beat the orange juice, egg and melted butter together in a second bowl.
- Pour the wet mixture into the dry and fold just until the flour disappears.
- Fold in the halved cranberries and the walnuts.
- Scrape the thick batter into the prepared pan and smooth the top.
- Sprinkle the coarse sugar evenly across the surface.
- Bake for 55 to 65 minutes, until the top is domed and split and a skewer comes out clean.
- Cool the loaf in the pan for 20 minutes.
- Turn it out onto a rack and cool it completely, then slice it thick.
