
Barbecued Country-Style Ribs

Ingredients
- 4 pounds bone-in country-style pork ribs
- 2 tablespoons kosher salt
- 1 tablespoon coarse black pepper
- 1 tablespoon paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon dry mustard
- 1 cup apple juice
- 1 1/2 cups barbecue sauce
- 2 tablespoons cider vinegar
- 2 chunks apple wood
Before you cook
- Separate the country-style ribs and trim off any thick outer fat.
- Mix the salt, pepper, paprika, garlic powder, onion powder and dry mustard.
- Season the pieces all over and let them stand for 30 minutes.
- Stir the barbecue sauce and vinegar together in a small saucepan.
- Warm the sauce over low heat until it just loosens, then set it aside.
- Set up the grill for indirect heat with a drip pan under the empty side.
Steps
- Bring the grill to 275 degrees Fahrenheit and put the apple wood on the coals.
- Arrange the ribs on the indirect side in a single layer and close the lid.
- Cook for 1 hour, then turn each piece over.
- Cook for another hour, keeping the lid down except when you turn them.
- Move the ribs into a foil pan and pour the apple juice around them.
- Cover the pan tightly and cook for 45 minutes until the meat gives easily to a fork.
- Take the ribs out of the pan and set them back on the grate.
- Brush them with the warm barbecue sauce on all sides.
- Cook uncovered for 20 minutes, brushing once more, until the sauce turns tacky.
- Rest the ribs for 5 minutes and serve with extra sauce and cornbread.
