Peel-and-Eat Steamed Shrimp with Old Bay

Shrimp steamed above beer and vinegar in their shells with a heavy hand of Old Bay, the Chesapeake crab-house dish that takes fifteen minutes.

Ingredients
- 2 lb large shell-on shrimp, 21 to 25 count
- 1 cup beer
- 1 cup apple cider vinegar
- 3 tbsp Old Bay seasoning
- 1 tsp kosher salt
- 4 tbsp unsalted butter
- 1 lemon, cut into wedges
- 1 cup cocktail sauce
Before you cook
- Rinse the shrimp under cold water and drain them well.
- Toss the shrimp in a bowl with 2 tablespoons of the Old Bay and the salt until every shell is coated.
- Cut the lemon into wedges.
Steps
- Pour the beer and vinegar into a large pot and set a steamer basket above the liquid.
- Bring the liquid to a rolling boil over high heat.
- Spread the seasoned shrimp in the basket in as thin a layer as you can.
- Cover the pot and steam for 4 to 6 minutes, until the shells are pink and the shrimp have curled into loose C shapes.
- Check one shrimp by peeling it; the meat should be opaque white with no gray center.
- Melt the butter in a small saucepan over low heat.
- Dump the shrimp into a large bowl and toss them with the remaining 1 tablespoon of Old Bay.
- Serve warm or chilled with melted butter, lemon wedges, and cocktail sauce.
