Ingredients
- 1 chilled 9-inch pie crust, unbaked
- 1 1/2 cups granulated sugar
- 3 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 3 large eggs
- 1/2 cup unsalted butter, melted and cooled
- 1 cup whole buttermilk
- 1 tablespoon fresh lemon juice
- 2 teaspoons vanilla extract
- 1/4 teaspoon freshly grated nutmeg
Before you cook
- Fit the crust into a 9-inch pie plate, crimp the edge, and chill it for thirty minutes.
- Melt the butter and set it aside to cool to room temperature.
- Squeeze the lemon juice.
Steps
- Heat the oven to 350 degrees Fahrenheit with a rack in the lower third.
- Whisk the sugar, flour, and salt together in a large bowl.
- Beat in the eggs one at a time until the mixture is smooth and pale.
- Pour in the cooled melted butter and whisk it in completely.
- Add the buttermilk, lemon juice, and vanilla and whisk just until combined; do not beat air into it.
- Set the chilled crust on a rimmed baking sheet and pour in the filling.
- Grate the nutmeg evenly over the surface.
- Bake for 50 to 60 minutes, until the top is golden brown and the center jiggles slightly as one piece.
- Cool the pie completely on a rack, about three hours, before slicing.
- Serve at room temperature or chilled.
