Ingredients
- 1/2 cup unsalted butter
- 2 pounds ripe peaches (about 6 medium)
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Before you cook
- Peel the peaches, cut them off the pit, and slice them about half an inch thick.
- Toss the peach slices with the half cup of sugar and the lemon juice and let them sit for 20 minutes.
Steps
- Heat the oven to 350 degrees Fahrenheit.
- Put the butter in a 9-by-13-inch baking dish and set it in the oven until the butter melts, about 6 minutes.
- Whisk the flour, the one cup of sugar, the baking powder, and the salt together in a bowl.
- Pour in the milk and vanilla and whisk just until the batter is smooth.
- Take the hot dish out of the oven and pour the batter evenly over the melted butter without stirring.
- Spoon the peaches and their syrup over the batter, again without stirring.
- Dust the cinnamon over the top.
- Bake for 45 to 55 minutes, until the batter has risen up around the fruit and the top is deep golden and crisp at the edges.
- Let the cobbler rest for 20 minutes before spooning it out.
- Serve warm with vanilla ice cream.
