Ingredients
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 3/4 cup packed light brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1/4 cup granulated sugar for rolling
Before you cook
- Soften the butter at room temperature.
- Line two baking sheets with parchment.
- Put the quarter cup of sugar for rolling in a shallow bowl.
Steps
- Heat the oven to 350 degrees Fahrenheit.
- Whisk the flour, baking soda, baking powder, and salt together.
- Beat the butter, peanut butter, brown sugar, and granulated sugar until light and creamy, about 3 minutes.
- Beat in the egg and the vanilla until fully combined.
- Add the flour mixture and mix on low just until the dough holds together.
- Roll the dough into 30 balls the size of a large marble.
- Roll each ball in the granulated sugar.
- Set the balls two inches apart on the lined sheets.
- Press each ball flat with the tines of a fork, then press again at a right angle to make a crosshatch.
- Bake for 10 to 12 minutes, until the edges are set and lightly browned and the centers look barely dry.
- Cool the cookies on the sheet for 5 minutes, then move them to a rack.
