Ingredients
- 1 1/2 cups raisins
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon freshly grated nutmeg
- 3/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup packed dark brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 3 cups old-fashioned rolled oats
Before you cook
- Cover the raisins with hot water and let them plump for 10 minutes, then drain them well.
- Soften the butter at room temperature.
- Line two baking sheets with parchment.
Steps
- Heat the oven to 350 degrees Fahrenheit.
- Whisk the flour, baking soda, cinnamon, nutmeg, and salt together in a bowl.
- Beat the butter with both sugars until light and fluffy, about 3 minutes.
- Beat in the eggs one at a time, then the vanilla.
- Add the flour mixture and mix on low just until it disappears.
- Stir in the oats by hand, then the drained raisins.
- Let the dough sit for 15 minutes so the oats hydrate.
- Scoop the dough into 24 mounds of about two tablespoons each, spacing them two inches apart.
- Flatten each mound slightly with your palm.
- Bake for 11 to 13 minutes, until the edges are golden but the centers still look soft.
- Let the cookies rest on the sheet for 5 minutes, then transfer them to a rack.
