Ingredients
- 2 lb ground turkey (93% lean)
- 1 cup old-fashioned rolled oats
- 1 medium yellow onion, grated
- 1/3 cup sour cream
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon poultry seasoning
- 10 oz cremini mushrooms, sliced
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2 1/2 cups beef broth
- 1 teaspoon soy sauce
Before you cook
- Grate the onion on the large holes of a box grater and keep the juice with it.
- Slice the mushrooms about a quarter inch thick.
- Line a rimmed baking sheet with parchment.
Steps
- Heat the oven to 375 degrees Fahrenheit.
- Whisk the eggs, sour cream, Worcestershire sauce, salt, pepper and poultry seasoning together in a large bowl.
- Stir in the grated onion and the oats and let the mixture sit for 5 minutes so the oats soften.
- Add the ground turkey and mix gently with your hands until just combined.
- Shape the mixture into a loaf on the parchment, about nine inches long, and smooth the top with wet hands.
- Bake for 50 to 55 minutes, until the center reads 165 degrees Fahrenheit.
- Melt the butter in a large skillet over medium-high heat, add the mushrooms, and cook for 8 minutes without stirring much, until deeply browned.
- Sprinkle the flour over the mushrooms and stir for 1 minute to cook off the raw taste.
- Pour in the beef broth in a steady stream while whisking, add the soy sauce, and simmer for 5 minutes until the gravy coats a spoon.
- Rest the meatloaf for 10 minutes, slice it, and ladle the mushroom gravy over the top.
