Meatloaf portioned into a muffin tin so every single serving gets crisp edges, a bacon lid and its own puddle of glaze in half the usual baking time.

  1. Heat the oven to 400 degrees Fahrenheit.
  2. Stir the cracker crumbs and milk together in a large bowl and let them stand for 5 minutes.
  3. Whisk in the eggs, grated onion, Worcestershire sauce, salt, pepper and garlic powder.
  4. Add the ground beef and mix with your hands until just combined.
  5. Divide the mixture among the twelve muffin cups, pressing each one level.
  6. Spoon a teaspoon of glaze over each portion and spread it to the edges.
  7. Lay a half slice of bacon across the top of each muffin.
  8. Bake for 25 to 28 minutes, until the bacon is crisp and the centers read 160 degrees Fahrenheit.
  9. Let the muffins sit in the tin for 5 minutes, then lift them out with a spoon, leaving the rendered fat behind.
