A thick center-cut ham steak seared in a hot skillet and finished with pineapple rings caramelized in brown sugar, butter and a little of the can's own juice.

Ingredients
- 2 bone-in center-cut ham steaks, 1/2 inch thick (about 2 lb total)
- 1 can (20 oz) pineapple rings in juice
- 3 tablespoons unsalted butter
- 1/3 cup packed light brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon cider vinegar
- 1/4 teaspoon ground cloves
- 1/4 teaspoon black pepper
- 1 tablespoon vegetable oil
Before you cook
- Pat the ham steaks dry and snip the outer fat edge in a few places so they do not curl in the pan.
- Drain the pineapple rings, saving half a cup of the juice.
- Stir the brown sugar, Dijon, vinegar, cloves and pepper into the reserved pineapple juice.
Steps
- Heat the oil in a large skillet over medium-high heat until it shimmers.
- Sear the ham steaks for 3 minutes per side, until the edges are browned and the surface is glazed with fond.
- Move the steaks to a platter and keep them warm.
- Add the butter to the skillet and lay the pineapple rings in a single layer.
- Cook the pineapple for 3 minutes per side, until the rings are marked with brown caramel.
- Pour the brown sugar and pineapple juice mixture into the skillet and scrape up the browned bits.
- Simmer the glaze for 4 minutes, until it reduces to a syrup that coats the pineapple.
- Return the ham steaks to the pan and turn them once in the glaze to coat both sides.
- Cut each steak in half, top it with pineapple rings, and pour the remaining glaze over the plate.
