  1. Set a large nonstick or well-seasoned skillet over medium-high heat and let it get hot, about 2 minutes.
  2. Add the butter and swirl the pan until it foams and the foam begins to subside.
  3. Pour in the beaten eggs all at once and let them sit undisturbed for about 20 seconds, until the bottom sets.
  4. Push through the eggs with the flat edge of a spatula, chopping and turning them into large pieces as they set.
  5. Keep chopping and turning every few seconds for about 90 seconds, until the curds are firm and no wet egg pools in the pan.
  6. Slide the eggs onto plates the moment they look dry and serve right away.
