Ingredients
- 6 large eggs
- 2 tablespoons whole milk
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 tablespoon unsalted butter
Before you cook
- Crack the eggs into a bowl and beat them hard with a fork until the whites and yolks are completely blended and a little foamy.
- Beat the milk, salt, and pepper into the eggs.
Steps
- Set a large nonstick or well-seasoned skillet over medium-high heat and let it get hot, about 2 minutes.
- Add the butter and swirl the pan until it foams and the foam begins to subside.
- Pour in the beaten eggs all at once and let them sit undisturbed for about 20 seconds, until the bottom sets.
- Push through the eggs with the flat edge of a spatula, chopping and turning them into large pieces as they set.
- Keep chopping and turning every few seconds for about 90 seconds, until the curds are firm and no wet egg pools in the pan.
- Slide the eggs onto plates the moment they look dry and serve right away.
