Ingredients
- 4 large eggs
- 1 tablespoon unsalted butter
- 1/4 teaspoon kosher salt
- Pinch of black pepper
Before you cook
- Crack each egg into its own small cup so you can slide them into the pan without breaking the yolks.
Steps
- Set a nonstick skillet over medium-low heat and let it warm for 1 minute.
- Add the butter and let it melt without browning.
- Slide the eggs into the pan one at a time, keeping them from touching.
- Cook the eggs undisturbed for 4 to 5 minutes, until the whites are fully opaque all the way to the yolk and no clear jelly remains.
- Watch that the edges never brown; if they start to sizzle hard, lift the pan off the burner for a few seconds.
- Season the whites with the salt and pepper, keeping it off the yolks so they stay glossy.
- Slide the eggs onto plates with a thin spatula, yolk side up.
