  1. Heat a nonstick skillet over medium heat for about 90 seconds.
  2. Add the butter and swirl it to coat the whole bottom of the pan.
  3. Slide in the eggs and cook them for 2 minutes, until the whites are set but the edges are still pale.
  4. Season the whites with the salt and pepper.
  5. Slip a thin spatula fully under one egg and flip it in a single quick motion, close to the pan surface.
  6. Cook the flipped egg for just 20 to 30 seconds, then slide it onto the plate.
  7. Flip and briefly cook the remaining eggs the same way and serve immediately, before the yolks tighten.
