Ingredients
- 4 large eggs
- 1 tablespoon bacon drippings or unsalted butter
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
Before you cook
- Crack each egg into a separate small cup.
Steps
- Heat a nonstick or cast iron skillet over medium heat for 2 minutes.
- Add the fat and swirl until it shimmers.
- Slide the eggs in and cook for 2 minutes, until the whites are set.
- Break each yolk with the tip of a spatula so it spreads across the white.
- Cook 1 minute more, until the yolk begins to turn pale and opaque.
- Flip each egg and cook the second side for 1 to 2 minutes, until the yolk is firm all the way through.
- Season with the salt and pepper and serve hot.
