Ingredients
- 4 large eggs
- 4 tablespoons unsalted butter
- 1/4 teaspoon flaky salt
- Pinch of black pepper
Before you cook
- Crack each egg into a separate small cup.
Steps
- Melt the butter in a 10-inch skillet over medium heat until it foams and smells nutty, about 2 minutes.
- Slide the eggs into the butter and let them cook undisturbed for 1 minute.
- Tilt the pan toward you so the butter pools at the near edge.
- Spoon the hot butter over the whites and yolks steadily for about 90 seconds, returning the spoon to the pool each time.
- Keep basting until the whites are set and a thin white film has formed across the top of each yolk.
- Lower the heat if the butter darkens past golden brown at any point.
- Lift the eggs onto plates with a slotted spatula and finish with the flaky salt and pepper.
