  1. Melt the butter in a 10-inch skillet over medium heat until it foams and smells nutty, about 2 minutes.
  2. Slide the eggs into the butter and let them cook undisturbed for 1 minute.
  3. Tilt the pan toward you so the butter pools at the near edge.
  4. Spoon the hot butter over the whites and yolks steadily for about 90 seconds, returning the spoon to the pool each time.
  5. Keep basting until the whites are set and a thin white film has formed across the top of each yolk.
  6. Lower the heat if the butter darkens past golden brown at any point.
  7. Lift the eggs onto plates with a slotted spatula and finish with the flaky salt and pepper.
