
Steam-Basted Fried Eggs

A splash of water and a lid turn the skillet into a steam chamber, setting the tops of the eggs without a flip and without a drop of extra fat.

Ingredients
- 4 large eggs
- 2 teaspoons unsalted butter or neutral oil
- 2 tablespoons water
- 1/4 teaspoon kosher salt
- Pinch of black pepper
Before you cook
- Crack each egg into a separate small cup and set a tight-fitting lid next to the stove.
Steps
- Heat a nonstick skillet over medium heat and add the butter, swirling to coat.
- Slide the eggs in and cook for 1 minute, until the bottoms of the whites are set.
- Pour the water into an empty spot at the edge of the pan, away from the yolks.
- Cover the skillet immediately and turn the heat to medium-low.
- Steam the eggs for 60 to 90 seconds, until the whites are firm and the yolks wear a cloudy white film.
- Uncover the pan and let any remaining water cook off for a few seconds.
- Season with the salt and pepper and slide the eggs onto plates.
