Eggs dropped into a shallow pool of very hot oil so the whites blister and frill into crackling brown lace while the yolks stay soft.

Ingredients
- 4 large eggs
- 3 tablespoons olive oil
- 1/4 teaspoon flaky salt
- 1/4 teaspoon black pepper
- Pinch of crushed red pepper
Before you cook
- Crack each egg into a separate small cup.
Steps
- Pour the olive oil into a 10-inch skillet and heat it over medium-high until it shimmers and a drop of water snaps, about 2 minutes.
- Slide in two eggs and stand back, since the oil will spit.
- Fry the eggs for 60 to 90 seconds, tilting the pan and spooning oil over the whites, until the edges curl, brown, and turn crisp and lacy.
- Lift the eggs out with a slotted spatula and set them on a plate.
- Fry the remaining two eggs the same way in the oil left in the pan.
- Season all four eggs with the flaky salt, black pepper, and crushed red pepper and serve while the edges are still crackling.
