Ingredients
- 8 hard-cooked eggs, peeled
- 1/2 cup mayonnaise
- 2 stalks celery, diced fine
- 3 tablespoons minced red onion
- 2 teaspoons Dijon mustard
- 2 tablespoons minced fresh dill
- 1 teaspoon fresh lemon juice
- 3/4 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 slices sandwich bread, for serving
Before you cook
- Peel the hard-cooked eggs and pat them dry.
- Dice the celery fine and mince the red onion and dill.
Steps
- Chop the eggs into rough 1/2-inch pieces on a cutting board, leaving some larger chunks for texture.
- Scrape the chopped eggs into a mixing bowl.
- Stir the mayonnaise, mustard, and lemon juice together in a small bowl until smooth.
- Pour the dressing over the eggs and fold it in gently with a rubber spatula, taking care not to mash the pieces.
- Fold in the celery, red onion, and dill.
- Season with the salt and pepper and fold once more.
- Chill the salad for 15 minutes so the flavors settle.
- Pile the salad onto bread to make sandwiches, or serve it on lettuce leaves.
