
Banana Walnut Pancakes

Overripe bananas are mashed straight into the batter and sliced ones are pressed on top, so the fruit both sweetens the crumb and caramelizes on the griddle.

Ingredients
- 1 3/4 cups all-purpose flour
- 2 tablespoons light brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 3/4 teaspoon fine salt
- 2 very ripe bananas, mashed
- 1 firm banana, sliced into thin coins
- 1 1/2 cups buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted, plus more for the griddle
- 3/4 cup walnuts, toasted and roughly chopped
Before you cook
- Whisk the flour, brown sugar, baking powder, baking soda, cinnamon and salt in a large bowl.
- Mash the two ripe bananas in a second bowl until only small lumps remain.
- Whisk the buttermilk and eggs into the mashed banana, then stir in the melted butter.
- Pour the banana mixture into the dry ingredients and fold until just combined.
- Fold in half the walnuts and let the batter sit for five minutes.
Steps
- Set a griddle over medium-low heat and butter it lightly.
- Pour 1/3 cup of batter per pancake onto the griddle and spread it gently into a circle.
- Press five or six banana coins into the top of each pancake.
- Cook slowly until the underside is deep gold and the edges look dry, about three minutes.
- Flip the pancakes and cook another two minutes, letting the banana slices caramelize against the griddle.
- Transfer the pancakes to plates with the banana side facing up.
- Shower the stacks with the remaining toasted walnuts and pour syrup over the top.
