Ingredients
- 2 cups fresh apple cider
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 3/4 teaspoon fine salt
- 1 cup buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted, plus more for the griddle
- 1 tart apple, peeled and grated
Before you cook
- Boil the cider in a wide saucepan over medium-high heat until it reduces to 1/2 cup, about 15 minutes, then cool it completely.
- Whisk the flour, sugar, baking powder, baking soda, cinnamon and salt together in a large bowl.
- Beat the cooled cider reduction, buttermilk, eggs and melted butter together in a second bowl.
- Squeeze the grated apple in a towel to wring out its juice.
- Stir the wet ingredients and the grated apple into the dry ingredients until just combined.
Steps
- Heat a griddle over medium heat and butter it.
- Ladle 1/3 cup of batter per pancake onto the griddle.
- Cook until the underside is a rich mahogany from the cider sugars, about two minutes.
- Flip the pancakes and lower the heat slightly to keep them from scorching.
- Cook for another two minutes, until cooked through in the center.
- Serve the pancakes hot with butter and a dusting of cinnamon sugar.
