Ingredients
- 1 1/2 cups old-fashioned rolled oats
- 2 cups buttermilk
- 1 cup all-purpose flour
- 2 tablespoons light brown sugar
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon fine salt
- 1/2 teaspoon ground cinnamon
- 2 large eggs
- 3 tablespoons unsalted butter, melted, plus more for the griddle
Before you cook
- Stir the oats and buttermilk together in a large bowl and let them soak for 30 minutes at room temperature.
- Whisk the flour, brown sugar, baking powder, baking soda, salt and cinnamon together in a second bowl.
- Beat the eggs and melted butter into the softened oats.
- Fold the dry ingredients into the oat mixture until just moistened.
Steps
- Heat a griddle over medium heat and butter it.
- Spoon 1/3 cup of the thick batter onto the griddle and flatten it slightly with the back of the spoon.
- Cook until the underside is well browned and the edges look dry, about three minutes.
- Flip the pancakes and press them once with the spatula.
- Cook for two more minutes, until the center no longer feels wet.
- Serve the pancakes with butter, brown sugar and a pour of maple syrup.
