Ingredients
- 4 tablespoons unsalted butter
- 4 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon fine salt
- 4 cups whole milk
- 1 1/2 cups all-purpose flour
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
- Strawberry jam, for serving
Before you cook
- Put the butter in a 9-by-13-inch baking dish and set the dish in the oven as it heats to 400 degrees Fahrenheit.
- Whisk the eggs, sugar and salt together in a large bowl until pale.
- Whisk in the milk, then add the flour a little at a time so no lumps form.
- Stir in the vanilla and cardamom until the batter is thin and smooth.
Steps
- Take the hot dish out of the oven once the butter has melted and turned nutty brown.
- Tilt the dish to coat the bottom and sides with the browned butter.
- Pour the excess butter from the dish into the batter and whisk it in.
- Pour the batter into the hot dish and return it to the oven right away.
- Bake for 30 to 35 minutes, until the surface is blistered and browned and the center barely jiggles.
- Let the pancake rest for five minutes as it sinks and firms.
- Cut it into squares and serve with strawberry jam.
