An overnight sourdough sponge gives these waffles a tangy, shatteringly crisp shell that stays crisp long after they leave the iron.

Ingredients
- 1/2 cup active sourdough starter
- 2 cups all-purpose flour
- 2 cups whole milk
- 2 tablespoons granulated sugar
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon fine salt
- 1 teaspoon baking soda
- Nonstick spray or oil, for the iron
Before you cook
- Whisk the starter, flour, milk and sugar together in a large bowl until smooth.
- Cover the bowl and leave it at room temperature for eight hours or overnight until bubbly and sour.
- Beat the eggs, melted butter and salt into the risen sponge in the morning.
Steps
- Heat a waffle iron to medium-high and grease it lightly.
- Sprinkle the baking soda over the batter and fold it in, watching the batter foam up.
- Pour about 3/4 cup of batter into the center of the iron and close the lid.
- Bake for four to five minutes, until the steam slows and the waffle is deep brown.
- Lift the waffle out with a fork and set it directly on a wire rack so the bottom stays crisp.
- Repeat with the remaining batter, greasing the iron between waffles.
- Serve the waffles hot with butter and maple syrup.
