Half cornmeal and half flour, these Southern waffles bake up sandy-crisp and sturdy enough to stand under fried eggs, sausage gravy or plain butter.

Ingredients
- 1 cup fine yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon fine salt
- 1 3/4 cups buttermilk
- 2 large eggs
- 6 tablespoons unsalted butter, melted
- Nonstick spray, for the iron
Before you cook
- Whisk the cornmeal, flour, sugar, baking powder, baking soda and salt together in a large bowl.
- Beat the buttermilk, eggs and melted butter together in a second bowl.
- Stir the wet mixture into the dry ingredients until just combined.
- Let the batter stand for 10 minutes so the cornmeal softens and swells.
Steps
- Heat a waffle iron to medium-high and grease it.
- Pour about 3/4 cup of batter into the iron and spread it toward the edges with the back of a spoon.
- Close the lid and bake for four to five minutes, until the waffle is crisp and browned.
- Lift the waffle onto a wire rack.
- Repeat with the remaining batter, greasing the iron each time.
- Serve the waffles hot with butter and honey, or under fried eggs for a savory plate.
