Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup malted milk powder
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon fine salt
- 1 3/4 cups buttermilk
- 3 large eggs, separated
- 6 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Nonstick spray, for the iron
Before you cook
- Whisk the flour, malted milk powder, sugar, baking powder, baking soda and salt together in a large bowl.
- Beat the buttermilk, egg yolks, melted butter and vanilla together in a second bowl.
- Stir the wet mixture into the dry ingredients until just combined.
- Whip the egg whites to soft peaks and fold them into the batter in two additions.
Steps
- Heat a waffle iron to medium-high and coat it with nonstick spray.
- Ladle about 3/4 cup of batter into the center of the iron and close the lid.
- Bake for four minutes without lifting the lid.
- Check the waffle and give it another minute if it is not yet deep brown and crisp.
- Set the waffle on a wire rack and repeat with the remaining batter.
- Serve the waffles with plenty of butter and maple syrup.
