Molasses, ginger and black pepper make dark, spicy holiday-morning waffles that crisp hard at the edges and stay soft and cakey inside.

Ingredients
- 2 cups all-purpose flour
- 1/4 cup light brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon black pepper
- 3/4 teaspoon fine salt
- 1 1/2 cups buttermilk
- 1/3 cup unsulphured molasses
- 2 large eggs
- 6 tablespoons unsalted butter, melted
- Lightly sweetened whipped cream, for serving
Before you cook
- Whisk the flour, brown sugar, baking powder, baking soda, ginger, cinnamon, cloves, pepper and salt together in a large bowl.
- Beat the buttermilk, molasses, eggs and melted butter together in a second bowl until the molasses is fully dispersed.
- Fold the wet mixture into the dry ingredients until just combined and let the batter rest for five minutes.
Steps
- Heat a waffle iron to medium, since the molasses browns quickly.
- Pour about 3/4 cup of batter into the iron and close the lid.
- Bake for four to five minutes, until the waffle is firm at the edges and smells strongly of spice.
- Lift the waffle onto a wire rack so it crisps as it cools slightly.
- Repeat with the remaining batter.
- Serve the waffles topped with whipped cream and a little extra grated fresh ginger if you like.
