  1. Heat a waffle iron to medium, since the molasses browns quickly.
  2. Pour about 3/4 cup of batter into the iron and close the lid.
  3. Bake for four to five minutes, until the waffle is firm at the edges and smells strongly of spice.
  4. Lift the waffle onto a wire rack so it crisps as it cools slightly.
  5. Repeat with the remaining batter.
  6. Serve the waffles topped with whipped cream and a little extra grated fresh ginger if you like.
