Ingredients
- 8 slices Texas toast white bread, 1 inch thick
- 5 large eggs
- 1 1/4 cups whole milk
- 1/4 cup heavy cream
- 3 tablespoons granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon fine salt
- 5 tablespoons unsalted butter
- Powdered sugar and warm maple syrup, for serving
Before you cook
- Leave the bread slices out on a rack for 20 minutes to dry slightly if the loaf is fresh.
- Whisk the eggs, milk, cream, sugar, vanilla, cinnamon and salt together in a wide baking dish until no streaks of white remain.
- Set a wire rack over a baking sheet for the finished slices.
- Heat the oven to 200 degrees Fahrenheit.
Steps
- Lay four slices of bread in the custard and let them soak for 45 seconds.
- Turn the slices and soak the second side for another 45 seconds, until saturated but not falling apart.
- Melt two tablespoons of butter in a large skillet over medium heat until it foams.
- Lift the soaked slices out, letting the excess custard drip away, and lay them in the skillet.
- Cook for three minutes, until the underside is evenly brown and crisp at the edges.
- Flip the slices and cook for three minutes more, until the center is puffed and set.
- Move the finished slices to the rack in the warm oven and repeat with the remaining bread and butter.
- Dust the toast with powdered sugar and serve with warm maple syrup.
