
Brown Sugar Glazed Holiday Ham

A bone-in ham scored into diamonds, studded with cloves, and basted with brown sugar and mustard until the surface lacquers into a dark sticky crust.

Ingredients
- 1 bone-in fully cooked ham, 9 lb
- 2 tablespoons whole cloves
- 1 cup packed dark brown sugar
- 1/3 cup Dijon mustard
- 1/4 cup honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1 cup apple cider
Before you cook
- Take the ham out of the refrigerator 1 hour before baking.
- Trim the rind and any hard outer skin, leaving about a quarter inch of fat on the surface.
- Score that fat in a diamond pattern with cuts a quarter inch deep and an inch apart.
- Whisk the brown sugar, mustard, honey, vinegar, cinnamon, and allspice into a thick glaze.
Steps
- Heat the oven to 325 degrees Fahrenheit.
- Push a whole clove into the point of each diamond across the surface of the ham.
- Set the ham cut side down in a roasting pan and pour the apple cider around it.
- Cover the pan tightly with foil and bake for 1 hour and 45 minutes.
- Remove the foil and raise the oven to 400 degrees Fahrenheit.
- Brush a third of the glaze over the whole surface of the ham.
- Return it to the oven for 12 minutes.
- Brush on another third of the glaze and bake 12 minutes more.
- Apply the last of the glaze and bake a final 12 minutes, until the crust is dark and bubbling.
- Check the center with a thermometer, looking for 140 degrees Fahrenheit.
- Rest the ham for 20 minutes, then spoon the pan juices over the carved slices.
