A spiral-cut ham warmed gently in a foil tent, then finished with a honey and sugar coating caramelized under the broiler into the shattering crust of the mail-order hams.

Ingredients
- 1 spiral-cut bone-in ham, 8 lb
- 1 cup granulated sugar
- 1/2 cup honey
- 4 tablespoons unsalted butter
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1/4 teaspoon smoked paprika
- 1 cup water
Before you cook
- Let the ham sit at room temperature for 1 hour.
- Stir the sugar, cinnamon, cloves, ginger, and smoked paprika together in a bowl.
- Melt the butter with the honey in a small saucepan and keep it warm.
Steps
- Heat the oven to 300 degrees Fahrenheit.
- Set the ham flat side down in a roasting pan and pour the water into the bottom.
- Wrap the whole pan tightly in heavy foil so no steam escapes.
- Bake for 1 hour and 45 minutes, or about 13 minutes per pound, until the center reads 120 degrees Fahrenheit.
- Take off the foil and pour off the pan liquid.
- Brush the honey butter over the entire surface, working it between the spiral slices.
- Pat the spiced sugar all over the ham in a thick even coat.
- Switch the oven to broil and move the rack to the middle position.
- Broil the ham for 3 to 5 minutes, watching it constantly, until the sugar melts and bubbles into a glassy shell.
- Rotate the pan and broil another 2 minutes to even out the color if needed.
- Let the ham stand 15 minutes so the crust hardens before you pull the slices apart.
