A warm Midwestern potato salad with no mayonnaise at all, dressed instead in bacon fat, cider vinegar, and sugar and served straight from the skillet.

Ingredients
- 3 pounds red potatoes, sliced 1/4 inch thick
- 8 slices thick-cut bacon, chopped
- 1 large onion, diced
- 2 tablespoons all-purpose flour
- 2 tablespoons granulated sugar
- 2/3 cup apple cider vinegar
- 3/4 cup water
- 1 1/2 teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon celery seed
- 1/3 cup chopped fresh parsley
- 3 scallions, sliced
Before you cook
- Scrub the potatoes and slice them a quarter inch thick, leaving the skins on.
- Chop the bacon and dice the onion.
- Chop the parsley and slice the scallions.
Steps
- Put the sliced potatoes in a pot, cover them with salted water, and bring it to a boil.
- Simmer for 10 minutes until the slices are just tender but not falling apart.
- Drain the potatoes and hold them in a warm bowl.
- Cook the bacon in a large skillet over medium heat for 8 minutes until crisp.
- Lift out the bacon and leave about a quarter cup of fat in the pan.
- Cook the onion in the bacon fat for 6 minutes until translucent.
- Sprinkle the flour and sugar over the onion and stir for 2 minutes.
- Pour in the vinegar and water and whisk as the dressing thickens, about 3 minutes.
- Season the dressing with the salt, pepper, and celery seed.
- Pour the hot dressing over the warm potatoes and fold gently.
- Fold in the bacon, parsley, and scallions and serve warm.
