  1. Whisk the mayonnaise, sour cream, lemon juice, honey, salt, and pepper together in a large bowl.
  2. Add the diced apples immediately and toss, since the lemon in the dressing keeps them from browning.
  3. Fold in the celery and grapes.
  4. Chill the salad for 30 minutes so it is properly cold.
  5. Fold in the toasted walnuts just before serving so they stay crunchy.
  6. Spoon the salad onto lettuce leaves to serve, the way the Waldorf originally plated it.
