Fresh pork breakfast links steamed in a covered skillet first so they cook through without splitting, then uncovered and rolled in their own fat until glossy brown all around.

Ingredients
- 1 lb fresh pork breakfast sausage links (12 to 16 links)
- 1/3 cup water
Before you cook
- Separate the links if they are joined.
- Set out a lid that fits your skillet.
Steps
- Arrange the links in a single layer in a cold 12-inch skillet.
- Pour the water around them and set the skillet over medium heat.
- Cover the skillet and cook for 5 minutes, until the water is steaming hard and the links have turned from pink to pale gray.
- Uncover and let the remaining water boil off, about 2 minutes.
- Roll the links with tongs so a fresh side meets the pan.
- Cook for 6 to 8 minutes total, turning every 90 seconds, until every side is glossy and browned and an instant-read thermometer in the thickest link registers 160°F.
- Move the links to a paper-towel-lined plate for a moment to shed loose fat.
- Serve hot, with the pan fat saved for frying potatoes.
