
Glazed City Ham Steak

A thick center-cut slice of wet-cured ham seared in butter and finished with a quick brown sugar and mustard glaze that reduces to a sticky, sweet-sharp coat.

Ingredients
- 1 bone-in ham steak, about 1 lb and 1/2 inch thick
- 1 tbsp unsalted butter
- 3 tbsp packed light brown sugar
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 2 tbsp water
- 1/8 tsp ground cloves
- 1/4 tsp coarsely ground black pepper
Before you cook
- Pat the ham steak dry on both sides with paper towels.
- Cut three slits through the outer fat rim so the steak lies flat as it cooks.
- Whisk the brown sugar, mustard, vinegar, water and cloves together in a small bowl.
Steps
- Melt the butter in a 12-inch skillet over medium-high heat until it foams.
- Lay the ham steak in the pan.
- Sear for 4 minutes without moving it, until the underside is deeply browned in patches.
- Flip the steak with tongs and sear the second side for 3 minutes.
- Move the steak to a plate.
- Pour the glaze mixture into the hot skillet and scrape up the browned bits with a spatula.
- Boil the glaze for 2 minutes, stirring, until it thickens enough to leave a trail behind the spatula.
- Return the ham steak to the pan and turn it twice in the glaze to coat both sides.
- Simmer 1 minute more, until the ham is heated through and lacquered.
- Grind the black pepper over the top, cut the steak into four pieces and spoon the pan glaze over them.
