The day-after-Thanksgiving skillet of chopped turkey, celery and potato bound with a little cream and sage and crusted brown, the way Southern kitchens clear the platter.

Ingredients
- 3 tbsp unsalted butter
- 1 medium yellow onion, chopped
- 2 celery ribs, chopped
- 1 lb cooked turkey, dark and white meat, chopped into 1/2-inch pieces (about 3 cups)
- 2 cups cooked potatoes, cut into 1/2-inch dice
- 1/2 cup turkey stock or chicken stock
- 1/3 cup heavy cream
- 1 tsp rubbed sage
- 3/4 tsp kosher salt
- 3/4 tsp coarsely ground black pepper
- 1 tbsp chopped fresh sage or parsley
Before you cook
- Chop the onion and celery.
- Chop the cooked turkey into half-inch pieces.
- Cut the cooked potatoes into half-inch dice.
- Chop the fresh sage or parsley.
Steps
- Melt the butter in a 12-inch cast-iron skillet over medium heat.
- Add the onion and celery and cook 6 minutes, stirring, until soft and lightly golden.
- Add the potatoes and cook 6 minutes, turning them once or twice, until they take on color.
- Add the chopped turkey, rubbed sage, salt and pepper and stir to combine.
- Pour in the stock and let it bubble away for 3 minutes, scraping the browned bits off the pan bottom.
- Pour in the cream and stir once.
- Press the hash into an even layer with a spatula.
- Cook undisturbed for 8 minutes over medium heat, until the bottom has set into a browned crust and the cream has been absorbed.
- Flip the hash in large sections and cook 4 minutes more.
- Taste for salt, scatter the fresh sage over the top and serve.
