
Diner Breakfast Steak with Onions

A thin sirloin seasoned hard and seared in a screaming cast-iron pan, then topped with onions cooked down in the steak's own drippings.

Ingredients
- 2 top sirloin steaks, about 8 oz each and 1/2 inch thick
- 1 1/2 tsp kosher salt
- 1 tsp coarsely ground black pepper
- 1/2 tsp garlic powder
- 1 tbsp vegetable oil
- 2 tbsp unsalted butter
- 1 large yellow onion, sliced 1/4 inch thick
- 1 tbsp Worcestershire sauce
- 2 tbsp water
Before you cook
- Take the steaks out of the refrigerator 30 minutes ahead so they lose their chill.
- Pat both sides of each steak completely dry with paper towels.
- Season both sides with the salt, pepper and garlic powder, pressing the seasoning in.
- Slice the onion into quarter-inch half-moons.
Steps
- Heat a 12-inch cast-iron skillet over high heat for 4 minutes, until a drop of water skitters and vanishes instantly.
- Add the oil and swirl it to coat the pan.
- Lay the steaks in the pan, laying them away from you.
- Sear 3 minutes without moving them, until a dark brown crust has formed.
- Flip the steaks with tongs and sear 2 to 3 minutes on the second side for medium-rare, or until an instant-read thermometer reads 130°F.
- Move the steaks to a plate and tent them loosely with foil to rest.
- Reduce the heat to medium and add the butter and sliced onion to the same pan.
- Cook the onions 8 minutes, stirring and scraping up the browned bits, until they are limp and browned at the edges.
- Add the Worcestershire sauce and water and let them bubble for 1 minute, until the pan is nearly dry again.
- Pour any juices from the resting plate into the onions and stir.
- Slice the steaks against the grain, pile the onions over them and serve.
