  1. Wipe the oil around a 12-inch nonstick or cast-iron skillet and set it over medium-high heat.
  2. Lay in the slices in a single layer, working in two batches if needed.
  3. Fry 3 minutes without moving them, until the undersides are browned and the edges have started to crisp and curl.
  4. Flip the slices with a spatula and fry 2 to 3 minutes more.
  5. Pour the brown sugar and soy mixture over the slices.
  6. Turn the slices in the glaze for about 45 seconds, until the liquid has reduced to a sticky coating that clings.
  7. Take the pan off the heat before the sugar darkens past amber.
  8. Grind the black pepper over and serve hot with rice or toast.
