Iowa's Maid-Rite-style sandwich, a crumbled seasoned beef that is simmered rather than browned and spooned loose onto a steamed bun with mustard and pickles.

Ingredients
- 2 lb ground beef, 85/15
- 1 medium yellow onion, finely diced
- 1 cup beef broth
- 1 tbsp yellow mustard
- 1 tbsp apple cider vinegar
- 2 tsp Worcestershire sauce
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp celery salt
- 6 soft white hamburger buns
- Yellow mustard and dill pickle chips, for serving
Before you cook
- Dice the onion very fine.
- Have a slotted spoon ready, since the meat is served drained.
Steps
- Put the ground beef in a wide skillet over medium heat and break it apart with a wooden spoon while it is still cold.
- Add the diced onion and keep chopping at the meat with the edge of the spoon for 6 minutes, until every piece is fine and crumbly and no clumps remain.
- Pour in the beef broth, mustard, vinegar, and Worcestershire.
- Stir in the salt, pepper, and celery salt.
- Bring the pan to a gentle simmer, then lower the heat and cook uncovered for 20 minutes, stirring now and then, until the beef is very tender and most of the liquid has cooked away but the meat still looks moist.
- Set the buns cut side down over the simmering meat for the last 2 minutes to steam them soft, or warm them in a covered skillet.
- Spoon the loose meat onto each bun bottom with a slotted spoon, mounding it high and letting some spill.
- Add a squeeze of mustard and a few pickle chips.
- Close the sandwiches and serve them with a spoon on the side for the meat that falls out.
