  1. Lay the bacon in a cold large skillet and set it over medium heat.
  2. Cook the bacon for about 10 minutes, turning the slices a few times, until deeply crisp, then drain it on paper towels.
  3. Toast all twelve slices of bread until light golden and still flexible.
  4. Spread mayonnaise on one side of four slices, both sides of four slices, and one side of the last four slices.
  5. Set the four single-sided slices mayonnaise up on a board as the bottom decks.
  6. Layer turkey on each bottom slice, dividing it evenly.
  7. Cover the turkey with a middle slice, mayonnaise on both faces.
  8. Stack three slices of bacon, a lettuce leaf, and two tomato slices on each middle deck.
  9. Close each sandwich with a top slice, mayonnaise side down, and press down gently with your palm.
  10. Push a wooden pick straight down through each quadrant of the sandwich, about an inch in from the corners.
  11. Cut each sandwich into four triangles, slicing corner to corner between the picks.
  12. Stand the triangles up on the plate so the layers show and serve with chips or fries.
